A Holiday Weekend

We enjoyed spending a few days with this little guy.

Grandpa was very happy just to watch.

These two are always trying to dress alike.

 I was there too.

We were lucky to have Scott entertain us.

We went to the hot springs

and stopped to see a bald eagle or two on the way home.

I can't believe this is their first time at the Burnt Lemon Grill.

Then we went for a walk in the canyon.

Some people walked more than others.

This is what he did while, 

everyone else played Keith and Courtney's a game.

And of course, he enjoyed reading Grandma's Kindle in his car.

He is back home and we are missing him.

It's that time of year again

I have to admit that my life has been a little crazy the past couple of weeks.  
In a nut shell, we have been in charge of a couple of dinners, 
made a day trip to Utah, shut my thumb in the car door, really stupid,
and I saved one not so little project for last.  
I am making Peter a quiet book.

I really felt that I did not have a Christmas Letter in me this year,
but I did come up with one last Saturday.
Wes and I make a great team.  I come up with the wacky ideas,
and then he makes it look perfect.
If I sent you one and I usually don't, forgive me,
I was working with crushed thumb.
The main point is we love you all and wish you

First, it was really hard not to come down and blog everyday.
I have to admit, that being grateful everyday wasn't easy.  
During the month, we had a major plumbing issue,
Richard had a hard time recovering from appendicitis, and
I had bursitis (really)  in my knee and hurt like....well, you know.
But blogging everyday, made me more aware of the countless blessing I have been given.

Yesterday Wes and I went to Twin Falls High School for State Drama.
It is the 1st time I had been back to my old home since I graduated.
It was weird...say no more...
Rich did great.  He went to finals, and ended up with 4th place.
The team took home 2nd place. 
There was an amazing amount of talent there.

I have cut white sugar our of my life.
It was a difficult breakup,
 but I am finding there is life after white sugar.
I tried these and they are wonderful.

I used almond butter and half sugar free chocolate chips - half regular 
and of course, added some coconut.
They are amazing, 
but don't tell Wes, or he will eat them all.

Last Day

I missed yesterday,
not because I was shopping,
but because Scott is using our computer to do homework 
and has been doing TONS of research.  
So what was I grateful for?
I was grateful for a lovely weekend and spending it with these two.

They have been great this weekend.
They have worked hard, made me laugh, and even played a game or two.
Love them.

Now, for the last day of the month.
Whenever we have the kids home, I pick a morning and make sourdough pancakes.

My grandma used to make us sourdough pancakes when we would go visit,
and my grandpa would make them when we camped.
He made them in a cast iron skillet over a fire.
The man was amazing.
So making these crepe like pancakes with our own syrup is a treat 
and it brings back good memories.

 Here is the sourdough starter and pancake recipe.  

Sourdough Starter:

2 cups flour
2 cups warm water
1 dry yeast pkg.

Combine in a bowl and cover.  Leave out overnight.  The next day take out 1 to 1/ 1/2 cups into a pint jar with a tight fitting lid.  Refrigerate until next use.  The remainder of the starter can be used to make pancakes --- the first batch will be slightly thin.

To Make Pancakes:

Take the starter jar and empty it into a bowl. 
 Add 2 cups flour and 2 cups milk.  
Let stand covered overnight or about 12 hours.

To the remainder add
1 ½                  3                      6                     Tbl. butter
1/8                   1/4                   1/2                   tsp salt
1                      2                      4                      tsp baking soda
1                      2                      4                      tsp   rounded p baking powder
1 ¼                  2 1/2                5                      Tbl. sugar
1                      2                      4                      eggs.

8-ish                16-ish               30-ish                yield pancakes

Stir well with a wire whip and spoon onto griddle.

To make your syrup:
1 cup corn syrup
1 cup water
1 cup brown sugar
1 cup white sugar

Combine all in a 2 quart sauce pan and bring to a boil.  Boil until it is clear, it won't take long, and serve warm.  Save in an air tight container in the refrigerator.

Mom's Rolls

My mother always made great rolls.
Not perfect rolls, but they always tasted great.  
She made Parker house Rolls, which I can make,
however, I make my rolls with the use of the bread machine.
I am so thankful for it.  It always works.
I love the honey wheat and the butter rolls.
They may not be perfect, 
but they taste good.

Katelyn is fun and ever so patient with Peter.
I just love them all.

23 years ago, I knew I was going to have a Thanksgiving baby.
It took him all day to decide to come out,
and was born before the doctor came in the room.
I think you always have to be thankful for baby born on Thanksgiving.

or at least that's what Grandpa Hall always told me.

Catch up day

We lost our internet for a few days, so I will play catch up today.  

First I am thankful for the country of Uruguay.
I know, it seems odd, but it was there that I grew up.
I made great friends there and hope to go back one day.

Second, I am thankful that Rich has his drivers licence.  
He has been grounded from the car this week, and really,
it is worse for us than for him.

And for today, I am thankful for our great neighbors.
Besides the fact that they helped fix our internet issues,
they help us all the time.  
They moved to the neighborhood right before we did
and I'm not sure what we would do without them.
To be honest, I'm not sure what the neighborhood would do without them.

It brings me peace, light and joy.

I am grateful that I have religious freedom and to me, 
that means that we can all worship how we choose. 
Having mutual respect is an important part of religious freedom.

Receiving Blankets

I am grateful that I learned how to make these receiving blankets.
I remember the day my mother taught me how.
As a result, I have been able to give many of these as gifts.

People always ask me how to make them, and when I tell them, 
they always say, 'That doesn't work.'
I tend to disagree, considering I make about 12 a year.

So here are the two things that matter most.
Use a Wing needle in the sewing machine and
buy one of these. 

There are two crochet hooks inside here.
The metal one is perfect for these blankets.
( I have had mine for 12 years, but I bought a box just to make sure they are still inside)
I know, you have a little hook, but it is not this little.

For years, I was a stay at homer, and Fridays,
well, they just were another day.
Now, Friday means I get to stay at home.

I am grateful for my car.
Do I want to drive a minivan?  No
Do I like the color?  No
Do I wish I could get a different car?  Yes
Having said all of that,
this little van runs everyday, it is paid for,
and it can go up and over mountains without missing a beat.
And that is the only way I can go see my kids.

Veterans Day

On Veterans Day it is hard not to be thankful for a Vet.
I am grateful for my father, who served in the Korean War.
Thanks to all of those who have served this country.

Day 10

I have hurt my knee and the computers is downs stairs, 
so, in an effort to rest my knee yesterday, I didn't post.
However, I knew what I was thankful for.
I am thankful for Duck Dynasty.
I know, I know, it's stupid,
but it is funny.
These guys make me laugh.

Don't judge, they are good, God fearing, rednecks.

I am grateful for my mother.
Even though I always said I would never be like her,
I grew up to be just like her.
We love all the same things;
shoes, chocolate, sewing and family.

She's the best.

The Sky

There are somethings so simple, that we don't always notice them.
Today, I am thankful for the sky.

Some days it says, come and play.

And some times it seems that God is watching us.

And then there are nights when I look at the stars and feel so blessed.

It is just one of those things that I am grateful for.

Medical Day

Today I am thankful for these two doctors.  I was so  discouraged when we moved here that I would never find someone to replace Dr. Lunat, but after a few years, we found Dr. Brown. He has a great sense of humor and he really does listen to you whine.   Dr. Lunat was our Pediatrician in California.  He was awesome.  He gave us the sound advice to never take Scott to a restaurant when Scott was little.  Every time I took the kids in, he made me feel better.

Sew Thankful

Sew, I mean, So, on day 5 I am thankful for this little corner of my life.

have been sewing forever...
I remember making my grandma a "purse" when I was really young.
I was happy that she took it, but many years later, 
she showed it to me and it was not so good.

I made my first quilt when I was in High School,
and then gave it up for some major construction projects.

I love to have a few minutes to sit down and sew,
because piecing brings me peace.

Day 4

Today I'm thankful for Henry, make that Mr. Henry.
He is in Kindergartner, he was like a wild child when the year started.
Now he will do his work and then we go work on the ipad.
He always has a boogers in his nose, he swears like a sailor,
and he usually needs to wash his hands.
I would like to smack his parents heads together,
because they have no expectations for him,
but I do and I will advocate for him.

So why am I grateful for Henry?
Because he gives me a big hug everyday, 
he makes me smile,
and says 'Don't leave' when it is time for me to go.

Day 2

We drove to Idaho Falls today to support Rich's XC team.
The things you will promise to a child about to have his appendix removed.
And I decided that today I would be thankful for Idaho.
Don't get me wrong.....I don't think it is perfect, or even close to perfect,
however, I was born here, 
my dad was born here,
as was his father.
There is something in the air, 
and around here we all know it is dairy air,
So today, I am thankful for Idaho.
